- 500g lean beef stir-fry strips
- 1 tsp sweet paprika
- Salt, to season
- 1 tbsp olive oil
- 1 onion, thinly sliced
- 250g button mushrooms, halved
- 1 cup (250ml) beef stock
- 1 tbsp Worcestershire sauce
- ¾ cup (180g) light sour cream
- 200g green beans, topped
- 2 tbsp chopped chives
- 4 slices wholegrain toast (optional, but essential)

- Step 1: Toss beef with paprika and season with salt and pepper. Heat oil in a pan, cook beef in batches until browned. Set aside.
- Step 2: Sauté onion until golden. Add mushrooms, cook until browned. Stir in stock and Worcestershire, simmer gently. Add sour cream, return beef, cook 1–2 mins more. Steam green beans separately until tender.
- Step 3: Plate the beef mix and beans. Sprinkle chives. Serve with toast like a boss.
